I just started playing a couple of unrated games here with a new dude. Fantastic! I hope he is Agdestein...

I think you missinterpreted something. Unrated means that your opponent does not have a rating yet.
I am considering supporting unrated games, but that feature is not available yet. As of now, all games are rated.

But if I remember well, playing with an unrated opponent does not affect your own rating. Is that right?

No, actually that means that you can play with an unrated opponent without risking your rating. After you finish the game, a rating according to the result and to your own rating will be assigned to opponent.
At least that was what I understand when read the About section

Well... if games were not rated unless both players were already rated, then it would be impossible to ever get rated because nobody would ever get the first rating.
But of course that isn't how it works... it would appear that only 'established' players can play unrated newcomers with impunity. I assume that established means 25+ completed games?
